Grilling hamburgers, hot dogs, steaks, chicken can get humdrum. For a change to your repertoire of grilling, try using a grill pan.
They come in round or square 10-12 inches sizes with an attachment handle. The grills are metal with small holes on the bottom and sides of the grill pan. Grill pans are handy to cook vegetables, fish, hamburgers, most any small size meats.
Grill pans can be found at Lowe’s, Home Depot and most Ace Hardware stores. They run about $9.99 to $12.99.
The recipe below is a great way to enjoy Chicken Fajitas using the grill pan.
- 4 chicken breasts (boneless, skinless) *
- 1/2 c. vegetable oil
- Fajita seasoning (see below)
- Red pepper, green pepper & yellow pepper (thinly sliced)
- 1 onion (thinly sliced)
- Salt and black pepper
- 1/4 c. vegetable oil
- 8 flour tortillas
- Vegetable oil
- 2-3 limes (cut into wedges)
Slice chicken breasts in thin slices. Place chicken in large bowl, pour vegetable oil over chicken and then sprinkle fajita seasoning over top, toss until chicken strips are coated.
Place peppers and onions in another mixing bowl, drizzle with vegetable oil, sprinkle with salt and black pepper. Toss vegetables until coated with oil.
Place grill pan on hot grill, add chicken strips in pan and grill until chicken is half cooked. Then pour vegetables into grill pan and stir with tongs. Stir often to make sure everything is cooked evenly. Chicken should be 165 degrees, vegetables should be just tender. Remove from grill and cover grill pan with aluminum foil to keep warm.
Lightly brush flour tortillas with vegetable oil, heat tortillas on both sides on grill, be careful the tortillas do not turn brown or get burnt.
Place some chicken strips and vegetables into a flour tortilla. Add shredded cheese, diced tomatoes, sour cream and salsa, squeeze some lime juice on top, fold tortilla in half. Enjoy!
Fajita Seasoning: 1 T. chili powder, 1 T. powdered cumin, 1 tsp. oregano, 1 tsp. salt and 1 tsp. black pepper. Place ingredients in small bowl, stir with a fork until well blended.
* For easier slicing of chicken breast, partially freeze chicken breasts.
