Liquid nitrogen is big at the Epcot International Food and Wine Festival this year, and it was well represented at the Brews, Breakfast and More event. What are the chefs freezing up?
Liquid nitrogen s’mores! This milk-free take on breakfast cereal was absolutely delicious. The freeze makes the marshmallows as crunchy as the other ingredients, and the coldness is pleasing to the palate.
The Brulee Beer Infused Grapefruit was served warm, which may sound odd but which is quite delicious. This sweet treat was paired with Gourd Shorts Pumpkin Ale from the Florida Beer Company.
The Cherrywood Bacon Wrapped Beer Brined Pork Tenderloin with Roasted Apples and Quail Egg was the meat of the breakfast, both figuratively and literally. The quail egg put a unique spin on the typical “eggs for breakfast” tradition. This dish was paired with Passport 20 Belgian-style Tripel Ale, which has 20 ingredients in honor of the Epcot International Food and Wine Festival’s 20th year.
Chicken and Waffles
Epcot is in the south, so what could be more fitting than a Disney spin on chicken and waffles? The chefs came up with a Cilantro Waffle with Fried Chicken and a side of Roasted Jalapeno Orange Agave Syrup. It paired nicely with Conchtoberfest beer.
Chef Leonard Thompson and Eulan Middlebrooks of Florida Beer Company took the stage to chat about each of the dishes and beer pairings throughout the Brews, Breakfast and More event.
