It’s not all about a boozed-up icee and a popsicle garnish, folks. At least, not for Vincenzo Marianella (The Independence, Providence, Love & Salt), head barman at Copa d’Oro in Downtown Santa Monica. As the sun dives into the Pacific, summer heats up off Broadway and 2nd as the cocktail den debuts 30 new summer cocktails to its thirsty denizens. In keeping with Copa’s standards, Marianella refreshed the menu to the season’s tastes using summer’s produce, organic juices, and signature housemade syrups, and he’s joined by GM Hector Bury below in chopping up the finer ingredients of the menu’s new summer standouts. Combined with some signature mainstays, the selection totals 40 cocktails. For what was already a sublimely liquid Happy Hour, Copa d’Oro just went turbo. Each drink receives a $5 trim all night Monday and 5:30pm – 8:00pm Tuesday through Sunday.

Vincenzo: This summertime cocktail will appeal to all your senses. It’s the egg white that makes it so perfect – that velvety frothiness.
Tequila, Maraschino Liquor, Apricot Brandy, Fresh Lemon Juice
Vincenzo: As anyone who knows me, my favorite spirit is Tequila. This cocktail takes all that I love about Tequila and balances it against the juxtaposing flavors of Maraschino liquor and the apricot brandy… It has such a nice bite.
Bourbon, Amaro Zucca, St Germain, Jerry Thomas Bitter
Vincenzo: This cocktail is a sneaky one… the Jerry Thomas bitters keeps the taste busy while the Zucca creeps up from behind. Very sneaky this one.
Hector: Zucca (rhubarb liqueur) is one of those things that most people have never heard of, but everyone should have a bottle of at home. It’s like BBQ sauce… it makes everything better.

Vincenzo: This is me trying to improve on an original… taste it and tell me how I did.
Hector: This cocktail is a perfect example of what I like about Vincenzo. He has the ability to balance ingredients that I would never think to put together.
Gin, Aperol, Limejuice, Ruby Red Grapefruit & Soda
Vincenzo: Grapefruit is such a wonderful juice. It’s both sweet and sour, and makes this cocktail the perfect summer thirst quencher.
Hector: With this cocktail you can almost feel the sun on your face and the sand on your toes.
