One of our favorite go-to bread recipes is Focaccia Bread with Italian Herbs. It is such a simple bread to make and often times, we will just serve it for supper with some pizza sauce or marinara sauce to dip it in. You can add any seasonings you like on this bread and even top it with ham, bacon, pepperoni, or browned hamburger. It is so delicious and so yummy. Focaccia bread does use quite a bit of olive oil, but it gives the bread a great flavor. If you do not have the fresh herbs, you can use dried herbs. 1-Tablespoon fresh herbs equal about 1 teaspoon dried herbs.
Focaccia with Italian Herbs
- 1 (0.25-oz) package active dry yeast
- 1-1/3 cups warm water
- 1 Tbs. sugar
- 1 Tbs. fresh chopped basil, divided
- 1 Tbs. fresh chopped oregano, divided
- 1 Tbs. fresh chopped parsley, divided
- 1 tsp. salt
- 4 Tbs. extra virgin olive oil plus extra for drizzling
- 3-1/2 c. all-purpose flour
- salt and pepper to taste
- Parmesan cheese
- Ham, bacon, hamburger (Optional)
- Pizza sauce or Marinara sauce (Optional)
Lightly grease a large bowl and set aside.
In a large mixing bowl, mix the warm water, yeast, and sugar. Allow the yeast mixture to stand for 10 minutes. This allows the yeast to start working and it tells you if it is alive or not. Stir in the basil, oregano, parsley, salt and extra virgin olive oil until combined. Using the mixer with the dough hook add the flour until fully combined and a sticky dough forms.
Place the dough into the greased bowl and cover it with a lint-free cloth or a sheet of plastic. Place the bowl in a warm, draft-free location and allow the dough to rise for 1 hour or until doubled in volume.
Grease or use olive oil in the bottom of a 9 by 13-inch baking pan. Punch the dough down to remove excess air, and place it into the prepared pan. Spread and push the dough so it covers the entire bottom of the pan. lace the pan in a warm draft-free location and allow to rise for about 30 minutes or until doubled.
With your fingers, dimple the top of the dough all over. Drizzle more olive oil over the top of the dough. Sprinkle salt, pepper and parmesan cheese over the top. You can sprinkle more oregano, basil parsley over the top too, if desired.
Place in a preheated oven set at 375° Fahrenheit. Bake for 20 to 30 minutes or until the bread is a golden brown. Cool slightly and cut into pieces.
