It’s always fun to give (and receive) candy at Halloween! With all the candy out there on the market, you’ll never run out of choices of candy to give out. However, instead of giving out candy, you may want to try your hand at making something fun and different for Halloween. The very answer can be found within your kitchen pantry when you make “Rainbow Popcorn Balls.”
This is a fun and eye-catching snack that will be fun to make and even more to give out. This is a treat that starts with a syrup made from corn syrup, sugar and orange gelatin, just as it comes from the box. It’s then combined with peanuts and popcorn. Then comes the fun part! You shape these into balls of desired size. They are now wrapped in cellophane, waxed paper or plastic wrap. If you would like to make these even more attractive, tie and orange or black ribbon around the closure of the wrap, just like you would for a candied apple. There you have it! A fun-to-eat snack that’s colorful for Halloween! These would also make neat party favors to give to each party guest.
In the recipe, it calls for orange gelatin. Make certain to use the regular gelatin and not the sugar-free version. You would need the extra sugar in the regular version to help the syrup cook correctly. You’ll also see that it calls for peanuts. These can be chopped or left whole, according to your personal preference. The original recipe calls for them to be chopped, but I’ve found that either way would be fine. It’s completely according to what you like.
Also, keep this recipe in mind for the upcoming Christmas season! You could make these with either the strawberry or cherry gelatin for red popcorn balls or lime gelatin for green ones. They’ll be very pretty and colorful! They would also make a nice sweet treat for youngsters, as well as party favors when you have parties this holiday season.

RAINBOW POPCORN BALLS
1 cup light corn syrup, such as Karo
1/2 cup sugar
1 pkg. (3 oz.) orange gelatin (not sugar-free)
1/2 lb. peanuts, chopped
9 cups popped popcorn
Combine syrup and sugar in a saucepan and bring to boiling. Remove from heat and add the dry gelatin, just as it comes from the package. Stir until dissolved. Add the peanuts and pour over the popcorn, tossing to mix well. Shape into balls of desired size. Wrap in cellophane, waxed paper or plastic wrap. For decoration, tie an orange or black ribbon around the tie-off of each ball. Store in a tightly covered container.
