The classic Italian dish, lasagna, is always a hit no matter where you serve it! Some folks like to have lasagna parties, where everyone brings their favorite dish of it for everyone to try. It’s an ever-popular dish that’s never lost it’s appeal. You may be in the mood for some homemade lasagna and may not have the lasagna noodles on hand to make it. Or, you could be just looking for something a little different from the traditional lasagna. Therefore, let’s look at “Mock Lasagna Casserole.”
This appears to have many of the same ingredients as regular lasagna, with the exception of the noodles. Here, you would use macaroni instead! You would start by browning some sausage and draining the fat. You then add tomato sauce, garlic salt, pepper, basil leaves, along with some water. This is covered and simmered for 15 minutes. Meantime, you can be cooking the macaroni. When everything is ready, you layer the macaroni with cottage cheese, American cheese, and the meat sauce. These layers are repeated and then it goes into the oven at 375 degrees for 30 minutes. Have a salad and some garlic bread ready and you’ll have one satisfying meal!
The sausage can be either mild or hot, depending on your preference. When cooking a meat like sausage or ground beef, here’s a trick to remember: place newspaper on a large plate and top with some paper towels. Place the cooked beef on top of the paper towels. This will enable you to drain the meat more thoroughly without having to use so many paper towels.
This is one of those recipes that’s easy enough for a young cook to make. They can make this quickly and easily and if you have a young cook in your home who’s very busy, this is a perfect recipe. While the casserole is baking, they can make the salad and the garlic bread and this can be a fast and easy meal that takes little time to make.
Whether you just want a change from regular lasagna or don’t have the lasagna noodles on hand, open a box of macaroni and create this tasty dish!
MOCK LASAGNA CASSEROLE
- 1 lb. bulk pork sausage
- 1 (15 oz.) can tomato sauce
- 1/2 teaspoon EACH of garlic salt, black pepper, and dried basil leaves, crushed
- 1/2 cup water
- 1 pkg. (7 oz.) pkg. macaroni, cooked and drained
- 1-1/2 c. cream-style cottage cheese
- 6 oz. process American cheese, shredded
Brown the meat and drain off the fat. Add the tomato sauce, garlic salt, black pepper, basil and water. Cover and simmer for 15 minutes, stirring occasionally. In a shallow 2 qt. casserole, layer half each of the macaroni, cottage cheese, shredded cheese and meat sauce. Repeat these layers again. Bake at 375 degree for 30 minutes. Yield: 6-8 servings.
