First off, “Happy Thanksgiving” to all the Examiner readers! Hope your day is a special one and that you’ll take time to count your blessings with your friends and family. Most importantly, be sure to give Our Lord the thanks He deserves for all He provides for us.
After today, if you’re cooking Thanksgiving dinner, you’ll likely have a ton of leftovers! You may be in the mood for a turkey sandwich one day, but after that, you’ll probably wonder how to use this leftover turkey. Let’s take the leftover turkey and make a good and easy main dish, “Busy Day Turkey Pie”. If you’re like many of us, you’ll be busy “Black Friday” shopping and decorating, so this would be an easy-to-do recipe to have handy for these busy days before Christmas!
The original recipe calls for a 3 lb. chicken, either a broiler or a fryer. You can certainly use that in this recipe as it calls for, but if you want to get rid of leftover turkey, use about four cups of it. You’ll also need 1-1/2 cups of either the chicken or turkey broth, so make sure to set some of that aside for this recipe. To begin, you’ll dot a 3-4 quart baking dish with butter. Then, you mix self-rising flour with milk and pour this into the prepared dish. Finally, you combine the chicken, broth, eggs and pepper and place this in the prepared dish on top of the batter. This now bakes at 350 degrees for about 40 minutes or until browned. A good and fast way to get rid of the leftover turkey!
If you choose to use chicken in the recipe, you would cook the chicken in salted boiling water until it’s tender. Then, you remove the chicken from the bones and skin and reserve 1-1/2 cups of the broth. You will now be able to proceed with the recipe as above. Serve this with some of your leftovers from the big meal and you’ll be able to get rid of the leftovers a little faster!

BUSY DAY TURKEY (OR CHICKEN) PIE
- 4 cups cooked, diced turkey OR 1 (3 lb) chicken, broiler or fryer
- 1-1/2 cups turkey or chicken broth
- 3 hard-cooked eggs, sliced
- 1/8 teaspoon pepper
- 1 cup self-rising flour
- 1 cup milk
- butter or margarine
If using chicken, cook it in salted boiling water until tender. Remove it from the bones and skin and reserve 1-1/2 cups chicken broth. Dot a 3-4 quart baking dish with butter or margarine. Combine the flour and milk to form a batter. Pour into the dish. Combine the turkey (or chicken), along with the broth, eggs, and pepper. Pour over the batter in the dish. Bake at 350 degrees for about 40 minutes or until browned. Yield: 6 servings.
