Having recently moved to the Brainerd Lakes area, we were bouncing with joy to discover not only a local food cooperative (Hackensack) but also a natural foods store in nearby Walker, Minnesota. The Green Scene is not just a market, but also a place to buy local and organic meats and vegetables, take a cooking class, eat a delicious and nutritious lunch, or even hear some great music while perusing their weekly farmers’ market (summers only.)
Tucked away near the Super One and Front Porch Quilts, you’ll find a small, artsy, green shop in which any number of delights await:

Into juicing? Order a weekly juicing kit filled with the following:
- 6 lbs. Apples
- 15 lbs. Carrots
- 7 lbs. Cucumbers
- 2 bunches Celery
- 3 bunches Kale
- 2 bunches Parsley
- 2 lbs. Beets
- Ginger Root
One of our favorite things to do while shopping in town is to stop in for lunch. The Green Scene offers a natural deli featuring gourmet sandwiches made on freshly baked local bread, salads, desserts, and take-home spreads. The favorite among those in the know is their “Nirvana” cashew dip. It’s such a hit the staff won’t give out the recipe, but here’s a link to the many recipes the eatery does share.
I, on the other hand, would not rest until I could make it at home. Hey, I can’t always just run to Walker when I am craving some cashew dip. I found this recipe online and adapted it as closely as possible to this amazing delight. Give mine a shot, but when in Walker, stop in and taste the original. Grab some chips or crackers and get your snack on Green Scene style!
1 and 1/2 cups raw cashews (or any other nuts in a pinch), chopped fairly fine
1/4 cup raw sesame seeds
1/3 cup nutritional yeast flakes
1/4 cups sesame oil – crucial for the right amount of sesame flavor
1/4 cup olive oil or safflower oil or what you have
several pieces of roasted bell pepper, minced
several squeezes of lemon or lime
a dash of Bragg’s Liquid Aminos, or Tamari, or Organic Soy Sauce, or Coconut Aminos
4-5 cloves of garlic
1/4 – 1/2 or more of fresh jalapeno, minced
1/4 – 1/2 cup of water (to bring it to your desired consistency)
You can place all this in a food processor and blend to a good consistency (leave it crunchy) or just individually chop and mix ingredients. This is great on crackers, pita bread, vegetable crudites, or even rolled in a fresh tortilla with basil and other greens. Try it on pasta!

Now, I gave the Green Scene five stars. Yes, it’s a smaller shop so there is not a bulk foods section. Yes, it’s in Walker (i.e., lots of cute shops for the tourists meaning higher prices on most items than you’d pay in a large coop or natural foods store) but hello, did I mention there is a natural foods store in northern Minnesota and it’s only about 15 miles from Hackensack and not an hour away in Brainerd or Bemidji?
Not to mention, they have a deli, they cater, they offer cooking classes, they feature local and organic and grass-fed and pastured products. Yeah. Need some clay deodorant that works? They’ve got it. Ran out of nori sheets for sushi? They’ve got you covered. Need some dip for a party? Get the “Nirvana.” Looking for organic chips or eggs or gluten-free, etc.? Done. Too busy to shop? Order a pre-made vegetable or fruit basket and pick it up. So easy you probably feel guilty… or just insanely happy!
Plus, there’s a Farmers’ Market every week through the summer with music, food and art – how awesome is that?!
