Another busy holiday season is upon us, and what better way to celebrate it than with an oven roasted turkey breast that’s easy enough for a weeknight as it is for a holiday dinner? If you’re like me, you usually go crazy on Thanksgiving and Christmas with a turkey so huge it could feed an army. Sometimes though, you just want to feed the two of you and have some leftovers for turkey sandwiches.
The 7-pound Jennie-O boneless turkey breast went directly from my freezer to the oven, so there was no thawing necessary, and the turkey breast was already pre-seasoned so I didn’t have to worry about seasoning it either. I simply removed it from the outer bag, and leaving it sealed in the inner oven-safe bag, it went straight into the oven until the turkey’s internal temperature reached 165°F. It even came with a pouch of turkey gravy too! Didn’t I say this was easy? The hardest thing I had to do was to make mashed potatoes and steam some green beans.
This 7-pounder was plenty big enough for us with extra leftovers for a turkey pot pie the next night. The flavor was excellent, and it was oh, so tender! The leftovers would make awesome turkey turnovers to stash away in the freezer for future lunches. I’m planning on putting a few extra Jennie-O turkey breasts in my freezer for post-holiday meals as well.
