The combination of chocolate and cherries is a true favorite among candy lovers! A good chocolate-covered cherry is very satisfying according to any chocolate fan! I came across a unique and easy-to-do recipe for a cake that combines these two flavors to make a “Chocolate-Cherry Refrigerated Sheet Cake.” This takes a cake mix and is dressed up to make a luscious dessert!
To start, you prepare the cherry-flavored portion of the cake first. You dissolve a package of cherry gelatin in some boiling water, to which you add cold water. This DOES NOT get refrigerated…..this sets at room temperature while you bake a package of Deep Chocolate cake mix according to package directions. Duncan Hines makes this flavor, but if you’re unable to find this flavor, any chocolate flavor will work fine. This cake is baked in a 9×13 inch pan. When the cake has come from the oven and has cooled for about 20-25 minutes, you poke deep holes throughout the cake with a fork. The prepared gelatin mixture is slowly poured all throughout the cake and is chilled while you make the topping.
The topping consists of an envelope of whipped topping mix, such as “Dream Whip”. This is combined with instant chocolate pudding and cold milk. This is all whipped together until stiff and is immediately applied to the cake. For decoration, you can garnish with maraschino cherries. The cake must be stored under refrigeration an served chilled. The cake can even be frozen to serve at a future time.
This cake also has three variations, each using a different flavor of cake mix and gelatin. The variations are listed under the recipe. Simply follow the basic directions for the original cake, substituting the corresponding ingredients. It’s a great dessert that cake be made in advance and enables you to get in and out of the kitchen fast!

CHOCOLATE-CHERRY REFRIGERATED SHEET CAKE
- 1 pkg. Duncan Hines Deep Chocolate Deluxe cake mix (or any chocolate flavor available)
- 1 pkg. (4 serving size) cherry gelatin
- 1 envelope whipped topping mix, such as “Dream Whip”
- 1 pkg. (4 serving size) INSTANT chocolate pudding
- 1-1/2 cups cold milk
- 1 teaspoon vanilla extract
Preheat oven to 350 degrees. Dissolve the gelatin in 3/4 cup boiling water. Add 1/2 cup cold water. Set aside at room temperature while baking the cake. Prepare the cake according to package directions, baking it in a 9×13 inch pan. Cool cake for 20-25 minutes. With a fork, poke deep holes in the cake all throughout it (cake stays in the pan). With a cup, slowly pour the dissolved gelatin over the entire cake. Cover and refrigerate while preparing the topping.
For the topping, in a CHILLED, deep bowl, blend the whipped topping mix with the pudding, cold milk and vanilla extract. Beat until stiff, about 3-8 minutes. Immediately frost the cake. Garnish with maraschino cherries, if desired. Cake must be stored under refrigeration and served chilled. Frosted cake may be frozen. Yield: about 20 servings.
