Although you could make this with fresh peaches, canned peaches work really well. So if peaches aren’t in season, never fear – a large can in light syrup is perfect. If you’re using fresh peaches, they will make their use juice as they bake.
Baked Chicken with Peaches
Ingredients for Baked Chicken with Peaches:
- 8 chicken breasts halves, boneless and skinless
- 1/2 cup flour
- 1 cup brown sugar (divided)
- 1 large can peaches with syrup, drain and reserve 1 cup of the liquid
- 1 tsp. cinnamon
- ½ tsp. nutmeg
- ¼ tsp. cloves
- ¼ tsp. ginger
Directions for making Baked Chicken with Peaches:
Preheat oven to 350 degrees. Lightly grease a 9 x 13 baking dish.
Drain and slice the peaches (reserving the liquid).
Put the flour in a large plastic bag. Shake each of the chicken breast halves separately in the flour so that all sides are lightly coated.
Place the chicken breast halves in a single layer in the bottom of the prepared baking dish. Sprinkle evenly with ½ cup of the brown sugar.
Put the peach slices evenly over the chicken. Sprinkle the remaining ½ cup brown sugar evenly over the peaches.
In a small bowl, mix together the cinnamon, nutmeg, cloves, and ginger. Sprinkle this mixture over the chicken and peaches. Drizzle the reserved peach juice over the chicken (if you don’t have quite 1 cup, just use what you have).
Bake uncovered for about 30 minutes in the preheated oven. Baste the chicken with the juices at least a couple times throughout the baking process. Once the chicken is done (no pink in the middle), remove from the oven. Serve with rice or orzo for an amazing dinner!
