With August slightly more than half over, we’re already seeing signs of fall. While fall doesn’t officially begin until September, you certainly don’t have to wait until fall to enjoy apples! They’re available all throughout the year, but we really start seeing them in the fall and we tend to associate fall with apples. Let’s start thinking about apples a bit early and make them into a salad, simply called “Heavenly Salad”.
This is a gelatin salad but it’s flavored with apples, nuts, crushed pineapple, as well as cream cheese and marshmallows. You can already see that this will be a great salad! You start by dissolving lemon gelatin in hot water. The marshmallows are added and stirred until they are melted. Cream cheese is added to this , followed by cold water. This is now chilled until it’s partially congealed. Now, the apples, nuts and crushed pineapple are folded in and this goes into a 9×13 inch dish and is refrigerated.
A creamy topping goes over this salad now. A mixture of sugar, eggs and lemon juice is cooked until thick. Once it has cooled, you now fold in some whipped cream and spread over the gelatin layer. This goes back into the refrigerator and chilled completely. When this has completely set up, it’s now cut into squares and can be served on lettuce leaves, if desired. It’s a cool and refreshing salad!
The recipe calls for 16 large marshmallows, but if you have miniature marshmallows, those can be used, but use 1-1/2 cups of them. Also, the recipe calls for whipped cream, but if you have some whipped topping on hand, that will work fine, too. For some added color, you can top the salad with maraschino cherries. If you wanted to, you can use red apples to add some additional color to the salad.

HEAVENLY APPLE SALAD
- 2 (3 ounce) pkgs. lemon gelatin
- 2 cups hot water
- 16 large marshmallows OR 1-1/2 cups miniature marshmallows
- 1 pkg. (8 oz.) cream cheese, softened
- 1 cup cold water
- 2 large apples, diced and unpeeled
- 1/2 cup chopped nuts
- 1/2 cup undrained crushed pineapple
Dissolve gelatin in hot water. Add the marshmallows and stir until melted. Cream the cream cheese until soft and smooth and combine with the dissolved gelatin mixture. Add the cold water. Chill until partially set, about 1 hour. Add the diced apples, nuts, and crushed pineapple. Turn into a 9×13 inch dish and return to the refrigerator.
- 3/4 cup sugar
- 2 eggs
- 2 tablespoons lemon juice
- 1 cup whipped cream or whipped topping
Mix together sugar, eggs, and lemon juice in a small saucepan and cook over very low heat. Stir constantly until blended and thick. Remove from heat and cool. Fold in the whipped cream. Spread over the gelatin layer and refrigerate until completely firm. Yield: 20 servings.
