“Down by the bay, where the watermelons grow…” Hey, did you know August 3 is National Watermelon Day? That’s what U.S. News and World Reports says. So in honor of the holiday, here are watermelon recipes and refreshing summer melon treats for National Watermelon Day!
Freeze watermelon ice; Cut seedless watermelon in ice cube shaped chunks. Chill. Add watermelon ice and lemon wedges to ice tea for a cool watermelon spritzer. Freeze mandarin orange segments, blueberries and kiwi slices. Blend with bananas and watermelon ice for a superfruit slushie. Add Greek yogurt for a power smoothie.
Or make rainbow fruit bars. Skewer red watermelon balls, orange cantaloupe balls. yellow pineapple chunks, green grapes, blueberries, blackberries and raspberries. Enjoy watermelon cocktails by blending Suntory Midori melon liquor, DeKuypers Watermelon liqueur, cranberry juice and ginger ale. Top with colored melon balls on a toothpick.
Make chunky watermelon salsa. Coarsely chop seedless watermelon, mango or papaya, tomatoes, onions, cucumbers and colored peppers (green, yellow, orange and red). Add chopped cilantro, oregano, sea salt, black and red pepper to taste. Serve on vegetarian tacos. Cook winter squash chunks in cumin, garlic, salt, oregano, lemon juice and Cajun red pepper. Place in grilled corn tortilla shell. Top with salsa, lettuce, shredded cheese and Greek yogurt. Blend avocado for a guacamole burrito.
Red, White and Watermelon shortcake. Bake buttermilk biscuits. Top with real butter. Make sauce blending watermelon chunks, rhubarb and strawberries. Add blueberries and whipped topping.
